Slice the focaccia bread horizontally to create a top and bottom half and lightly drizzle some olive oil over both halves of the focaccia.
Layer sliced tomatoes on the bottom half, and then add mozzarella slices on top of the tomatoes. Season with salt and pepper, then add a handful of fresh basil leaves.
Drizzle with some balsamic, a little more EVOO, and then cover with the top half of the focaccia.
Slice into 4 squares and serve immediately. Share with a friend (or 3!) and enjoy a perfect light lunch. Or, get outside and pack it away for a picnic!
